I have never taught a gen ed course, but the book I use for my Hispanic Studies students is Bernard Reilly’s The Medieval Spains. Cambridge UP, 1993. There may be something newer out, though.

I have good material for Latin America and Modern Spain, but nothing for premodernity (or whatever you want to call it). Thanks! David
